You don’t have a well equipped kitchen? Don’t be intimidated. Only have one frying pan in your entire kitchen? No problem. All you need is plastic wrap and foil in place of the pot cover. I’ll explain how to use it below.

So What Is That One Simple Step?

Believe it or not, it’s to sauté raw rice in your fat before adding water. Simple right? Just doing that one simple thing before simmering your rice in water will result in perfectly cooked, fluffy rice and not a glutenous lump of starch.

Why Does That Make The Rice Better?

Not only does sautéing the rice give additional flavor – a nutty aromatic flavor – but by sautéing the rice before adding water, you coat each rice grain with fat, thus preventing the rice grains from sticking together and each rice grain will cook evenly as a result, and when the rice is done, the rice grains will keep separated.

What’s The Perfect Basic Rice Recipe?

As a general rule, when making rice, I go with a one to two ratio. One cup of rice to two cups of water. Note, this ratio will not work in a pressure cooker. You will end up with rice pudding! For pressure cooker rice, the general rule is one cup rice to one and a quarter cups of water.

Basic Rice Recipe

    2 Tablespoons of fat (olive oil, avocado oil, butter – it’s your preference)
    1 Cup white long grain rice
    2 Cups of hot water or stock (for added flavor)
    Salt to taste
    Optional dried herbs
    Preheat oven to 375°F
    Heat oil in pan on high heat
    Turn heat to medium and add dry rice
    Stir rice until it is evenly coated in fat
    Stir in salt and dried herbs if using
    Add hot water or stock to pan and allow it all to come to a boil
    Cover with lid (If you don’t have a lid, cut two pieces of plastic wrap and one piece of foil large enough to cover the top of your pan. Remove pan from heat and carefully using oven mitts so you don’t get burned on the hot pan, cover the pan with one sheet of plastic, then the second piece and then the foil. Press it down on the pan tightly)
    Place covered pan in preheated oven for 18 minutes
    When done, remove pan from oven and carefully remove the cover and stir the rice with a fork.

And that’s it. A simple basic recipe. Doing brown rice? Then use the same exact recipe cook in oven for 50 mins instead of 18 mins.
